So what's the most number of fields anyone has seen on a planet? Also, if you colonize a place and then abandon, then colonize again, does it still have the same number?

From what I can gather from the forums, it changes each time it is colonized. If you have multiple colony ships, you can apparently just colonize and abandon until you get the number you want. --Rob 16:34, 6 November 2009 (UTC)

The highest I have seen is 302 fields. Believe it or not, it was on planet 1 of a system.
If you abandon a colony and then recolonize the same planet it WILL have a new number of fields. This is a technique that can be used if you wind up with a planet under 100 fields. --Narmuriel
